These coconut lemon cookies are soft, gently sweet, and made with all-natural, plant-based ingredients. Designed to nourish while delighting, they’re perfect for little snack moments or shared family baking.

Ingredients

  • 112 g coconut oil

  • 160 g maple syrup

  • 2 tbsp lemon zest

  • 2 g vanilla

  • 266 g oat flour

  • 34 g coconut flour

  • 3 g bicarbonate of sodium

Optional:
For cinnamon cookies, add 2 g cinnamon powder.

Method

  1. Blend all ingredients together until fully dissolved and smooth.

  2. Shape into small cookies and place on a lined baking tray.

  3. Bake at 170°C for 12 minutes.

  4. Allow to cool slightly and enjoy.
