Carrot & Ginger Soup
 

This vibrant soup blends sweet carrots with warming ginger — a nourishing bowl that supports digestion and immunity, especially during seasonal transitions.

Ingredients

  • 2 inches fresh ginger, peeled and minced

  • Carrots, a handful, scrubbed and chopped into ½-inch chunks

  • 1 tsp cumin powder

  • 1 tsp Himalayan salt

  • 1 tbsp olive oil

Garnish (optional):
Coriander, radish, sprouts, soaked buckwheat

Method

  1. Heat olive oil in a medium pot over medium heat.

  2. Add onion and ginger and cook until soft, stirring occasionally.

  3. Add carrots and broth. Simmer for 10–15 minutes, until carrots are tender.

  4. Transfer to a high-speed blender and blend until smooth.

  5. Garnish as desired before serving.
