Carrot & Ginger Soup
This vibrant soup blends sweet carrots with warming ginger — a nourishing bowl that supports digestion and immunity, especially during seasonal transitions.
Ingredients
2 inches fresh ginger, peeled and minced
Carrots, a handful, scrubbed and chopped into ½-inch chunks
1 tsp cumin powder
1 tsp Himalayan salt
1 tbsp olive oil
Garnish (optional):
Coriander, radish, sprouts, soaked buckwheat
Method
Heat olive oil in a medium pot over medium heat.
Add onion and ginger and cook until soft, stirring occasionally.
Add carrots and broth. Simmer for 10–15 minutes, until carrots are tender.
Transfer to a high-speed blender and blend until smooth.
Garnish as desired before serving.
