Purple Potato Wedges

Ingredients

  • Purple potatoes

  • Ground cumin

  • Ground turmeric

  • Coconut oil or olive oil

Method

  1. Preheat oven to 220°C.

  2. Cut potatoes into wedges and place in a bowl.

  3. Coat generously with oil and spices using a 2:1 ratio of cumin to turmeric (start with 1 tsp cumin : ½ tsp turmeric).

  4. Spread on a lined baking tray and bake for 25 minutes, tossing halfway, until crisp.
