Pumpkin Curry
This pumpkin curry is a grounding, warming dish — ideal for cooler seasons and immune support, with spices that gently stimulate digestion.
Ingredients
1 pumpkin
2 tsp ginger
1 tsp coriander seeds
½ fresh chilli, sliced
2 tsp cumin
1 tsp garam masala
2 tsp turmeric
1 tsp cinnamon
1–2 tomatoes, chopped
250 ml coconut milk
Method
Preheat oven to 150°C. Roast pumpkin for 20 minutes until soft.
For the masala, simmer spices and tomatoes in a pot for 15 minutes until a paste forms.
Add ½ cup water and allow to evaporate.
Add coconut milk and reduce gently on low heat.
Add roasted pumpkin and simmer briefly before serving.
