Pumpkin Curry

This pumpkin curry is a grounding, warming dish — ideal for cooler seasons and immune support, with spices that gently stimulate digestion.

Ingredients

  • 1 pumpkin

  • 2 tsp ginger

  • 1 tsp coriander seeds

  • ½ fresh chilli, sliced

  • 2 tsp cumin

  • 1 tsp garam masala

  • 2 tsp turmeric

  • 1 tsp cinnamon

  • 1–2 tomatoes, chopped

  • 250 ml coconut milk

Method

  1. Preheat oven to 150°C. Roast pumpkin for 20 minutes until soft.

  2. For the masala, simmer spices and tomatoes in a pot for 15 minutes until a paste forms.

  3. Add ½ cup water and allow to evaporate.

  4. Add coconut milk and reduce gently on low heat.

  5. Add roasted pumpkin and simmer briefly before serving.
